My toddler loves this recipe. I love it for the simplicity of ingredients. Also, it’s super simple and easy to make. And you can always add other ingredients as desired. But I know it’s a winner when my child says, “I love this” kid approved super simple nacho dip recipe.
Kid Approved: Super Simple Nacho Dip Recipe
Ingredients:
Tortilla chips of your choice (I love Trader Joe’s Flax and Veggie Chips)
Can of Refried Beans
2 cups of Chicken
Bag of shredded cheese (I used the Mexican style)
Tomatoes
Cilantro
Green onions
(Other toppings of your choice such as: Guacamole, Avocado, Salsa, Sour Cream, etc)
Directions:
- First, spray dish with a non stick spray.
- Next spread the refried beans evenly across the dish.
- Then spread a layer of shredded cheese.
- Next layer the chicken, tomatoes, chopped green onion, cilantro.
- Finally add another layer of cheese.
- Bake in the oven at 350 degrees for about 25-35 minutes or until cheese is melted and bubbly.
Alternatives To Ingredients
I originally tried this recipe at a church potluck. (And it’s great for potlucks). And the meat that was added was fried ground hamburger meat. I myself have made it with ground turkey meat which works just as well. But I can imagine any type of meat will work great with this recipe.
Beans by themselves are a great meat substitute. And they are a great source of fiber and protein. I’ve used a can of refried beans and a can of black beans and it turned out delicious.
I love the healthy ingredients in Trader Joe’s Flax and Veggie Chips. But I’ve also made this recipe using fried corn tortillas.
Either way, it’s a kid approved recipe that’s super simple and easy for those busy days.
