As a kid I went to a lot of different religious churches/temples/places of worship. We attended a Methodist church for a good portion of my childhood/teen years. And every year our church youth group made Chinese chicken salad to sell at festivals to fundraise. In high school we managed to sell enough Chinese Chicken Salad for our youth group to go to Hawaii on a nice budget. So you might say this is a lucky church Chinese Chicken Salad Recipe.
Chinese Chicken Salad: Popular Obon Food
The Japanese Obon festival is a celebration of those who have passed on. And this is the festival we would sell these lucky church Chinese chicken salads. And because Obon festivals are held in summer time, salads are a go to item!
Lucky Church Chinese Chicken Salad Recipe:
Ingredients for Salad:
- Lettuce (shredded)
- 2-3 Chicken breasts (cooked and shredded)
- Won ton skins (cut into strips and deep fried)
- Green onions (sliced thinly)
- Toasted Almonds
- Toasted sesame seeds
Instructions:
Combine above ingredients. Layer everything and add dressing.
Dressing Ingredients:
- 4 Tablespoons Sugar (or can use 8 packs of Splenda instead of sugar)
- 2-3 teaspoons of salt
- 1/2 teaspoon of pepper
- 4 Tablespoons of vinegar
- 1/2 cup of oil (1/8 cup of sesame oil and the rest vegetable oil)
Dressing Instructions:
Combine all ingredients except oil and dissolve in a sauce pan over low heat. Add oil after cooking.
